Green Chilli Chicken
Bring a little spice into your life with our easy slow cooker chicken recipe. It takes only minutes to prepare and is packed with flavour.
Ingredients
Approximately 1250 g of boneless, skinless chicken thighs
1tsp ground coriander
2tsp cumin
11/2tsp sea salt
1tsp black pepper
3 to 4 husked and diced tomatillos
227g diced green chillies
1 medium diced onion
3 cloves finely chopped garlic
Chopped cilantro and lime wedges for garnish
Instructions
- Arrange the chicken thighs on the bottom of the slow cooker and sprinkle with coriander, black pepper, salt and cumin. Toss to coat.
- Add the onion, green chillies, tomatillos and garlic. Cover and cook on low for five hours.
- Once cooked, remove lid and shred chicken meat with two forks. Serve with chopped cilantro and fresh lime wedges.
