Green Chilli Chicken

Bring a little spice into your life with our easy slow cooker chicken recipe. It takes only minutes to prepare and is packed with flavour.

Ingredients

Approximately 1250 g of boneless, skinless chicken thighs

1tsp ground coriander

2tsp cumin

11/2tsp sea salt

1tsp black pepper

3 to 4 husked and diced tomatillos

227g diced green chillies

1 medium diced onion

3 cloves finely chopped garlic

Chopped cilantro and lime wedges for garnish

Instructions

  1. Arrange the chicken thighs on the bottom of the slow cooker and sprinkle with coriander, black pepper, salt and cumin. Toss to coat.
  2. Add the onion, green chillies, tomatillos and garlic. Cover and cook on low for five hours.
  3. Once cooked, remove lid and shred chicken meat with two forks. Serve with chopped cilantro and fresh lime wedges.
