Spread a Little Lunchtime Happiness with Our Gluten-Free Mini Pizza Recipe

These mini pizzas are great for kid’s lunch boxes or even for midweek dinners and can be customised with your child’s favourite ingredients.

Ingredients

4 gluten-free tortillas or wraps

1 cup organic cheese

1 small grated carrot

1 cup pizza sauce

½ cup shredded spinach

Small, thinly sliced capsicum

½ cup shredded basil

Instructions

  1. preheat oven to 180°C and lightly oil a 12-cup muffin tin.
  2. Using a cookie-cutter, cut 3 to 4 medium circles from each tortilla and fit the cookie sized tortillas into the muffin tin, carefully pressing them down.
  3. Spoon a little pizza sauce onto each tortilla and sprinkle with toppings and some cheese.
  4. Bake in oven for 10 to 12 minutes until cheese has melted and serve immediately.
